Ingredients For sweet ale soup

  • 30 oz
    stout (sweet brown ale)
  • 1
    lemon - rind of
  • 16 oz
    milk
  • 2
    egg yolks
  • 1/2 stick
    cinnamon
  • 1 tsp
    ground ginger
  • 1 Tbsp
    cornstarch
  • 3 Tbsp
    cold water
  • salt to taste

How To Make sweet ale soup

    Place the beer, lemon rind, cinnamon and ginger in a large saucepan, bring to the boil then reduce the heat and simmer for 10 minutes.

    In a small bowl, mix together the cornstarch and cold water to a smooth paste.

    Add a few spoonfuls of the hot beer to the cornstarch mixture then add it to the beer, stirring constantly.

    Continue to simmer the soup gently for a further 10 minutes stirring from time to time.

    In a small bowl, mix together the egg yolks and milk.

    Add some of the hot soup to the egg mixture, stirring constantly. Return egg mixture to pot.

    Return soup to a very low heat and cook gently, without boiling, until heated through. Adjust the seasoning and serve immediately.
