Ingredients
- 30 ounces stout (sweet brown ale)
- 1 - lemon - rind of
- 16 ounces milk
- 2 - egg yolks
- 1/2 stick cinnamon
- 1 teaspoon ground ginger
- 1 tablespoon cornstarch
- 3 tablespoons cold water
- - salt to taste
How To Make sweet ale soup

Step 1Place the beer, lemon rind, cinnamon and ginger in a large saucepan, bring to the boil then reduce the heat and simmer for 10 minutes.

Step 2In a small bowl, mix together the cornstarch and cold water to a smooth paste.

Step 3Add a few spoonfuls of the hot beer to the cornstarch mixture then add it to the beer, stirring constantly.

Step 4Continue to simmer the soup gently for a further 10 minutes stirring from time to time.

Step 5In a small bowl, mix together the egg yolks and milk.

Step 6Add some of the hot soup to the egg mixture, stirring constantly. Return egg mixture to pot.

Step 7Return soup to a very low heat and cook gently, without boiling, until heated through. Adjust the seasoning and serve immediately.
