    strawberry juice
  • 1 Tbsp
    ginger juice, or to taste
  • 1
    ripe banana
  • 1 c
    sparkling apple cider or champagne
  • 4 Tbsp
    yogurt
  • 1 c
    mixed blueberries and red raspberries
  • ·
    mint sprigs for garnish

How to Make Strawberry Ginger Soup

Step-by-Step

  1. Combine juices and banana in a blender (or use an immersion blender) and blend until smooth.
  2. Add sparkling cider and ladle into chilled soup bowls.
  3. Serve with a dollop of yogurt, a scattering of fresh berries and a mint sprig or two.
