Ingredients
- 2.5 cups strawberry juice
- 1 tablespoon ginger juice, or to taste
- 1 - ripe banana
- 1 cup sparkling apple cider or champagne
- 4 tablespoons yogurt
- 1 cup mixed blueberries and red raspberries
- - mint sprigs for garnish
How To Make strawberry ginger soup

Step 1Combine juices and banana in a blender (or use an immersion blender) and blend until smooth.

Step 2Add sparkling cider and ladle into chilled soup bowls.

Step 3Serve with a dollop of yogurt, a scattering of fresh berries and a mint sprig or two.
