Ingredients

  • 2 packages frozen spinach, chopped
  • 1/4 cup onions, chopped
  • 1/3 cup sifted flour
  • 1 tablespoon salt
  • 1/4 cup peanut oil
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 6 cups milk
  • 1 - water

How To Make spinach soup

  • Step 1
    Cook frozen chopped spinach in unsalted water according to directions and drain.
  • Step 2
    Heat oil in large saucepan.
  • Step 3
    Add onion and saute until transparent (5 minutes).
  • Step 4
    Remove from heat.
  • Step 5
    Blend in flour, salt, pepper and nutmeg.
  • Step 6
    Stirring constantly, gradually add milk.
  • Step 7
    Then add spinach.
  • Step 8
    Cook over medium-high heat (about 15 minutes).
  • Step 9
    Stir often to prevent scorching.
