How to Make Spinach Soup

Step-by-Step

  • 1Cook frozen chopped spinach in unsalted water according to directions and drain.
  • 2Heat oil in large saucepan.
  • 3Add onion and saute until transparent (5 minutes).
  • 4Remove from heat.
  • 5Blend in flour, salt, pepper and nutmeg.
  • 6Stirring constantly, gradually add milk.
  • 7Then add spinach.
  • 8Cook over medium-high heat (about 15 minutes).
  • 9Stir often to prevent scorching.
