Ingredients

  • 1/2 pound ground chicken breast
  • 1/2 cup chopped onion
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped jalapeno pepper
  • 2 stalks celery, chopped
  • 2 cloves minced garlic
  • 1 package taco seasoning mix (taco bell)
  • 1/2 teaspoon dried red pepper flakes
  • 1 teaspoon dried cilantro
  • 1 teaspoon cumin
  • 1 can cream of chicken soup
  • 4 cups chicken broth or bouillon, lower sodium
  • 1 14.5 oz cans creamed corn
  • 8 ounces frozen white and yellow corn
  • 1 cup milk
  • 4 tablespoons instant potato flakes, to thicken

How To Make spicy corn soup

  • Step 1
    Brown ground chicken breast in pan with onions, peppers, celery and garlic.
  • Step 2
    Add taco mix and seasonings and mix well. Stir in cream of chicken soup and chicken broth. Simmer for 10 - 15 minutes.
  • Step 3
    Add creamed corn and frozen corn. Return to simmer and simmer another 15 minutes.
  • Step 4
    Stir in the milk and reheat to simmer. Stir in potato flakes and let sit for 5 minutes before serving.
  • Step 5
    Top with crushed tortilla chips.
