A favorite with my kids. They get excited when the cool weather comes around as they know it’s soup time! So easy & yummy! I always add some sort of pasta to mine for added texture, it’s optional.. Enjoy!

Ingredients

  • 4 cups each - steamed & chopped broccoli & cauliflower - do not overcook
  • 1 stick butter
  • 1/4 cup flour
  • 4 cups milk
  • 1 teaspoon badi ranch seasoning
  • 1 tablespoon dried onions
  • 1 teaspoon salt
  • 4 cups colby jack cheese freshly shredded
  • About 1 cup chopped linguini cooked and chopped into 1 inch pieces - optional
  • Bacon pieces for garnish

How To Make ~ soup is on - ez broc/ caul/ cheese soup ~

  • Step 1
    In a dutch oven, melt butter over medium heat. Once melted add flour and whisk to combine. Add onion, continue cooking and stirring a few more minutes. Add milk a cup at a time whisking to combine. Add spices & stir. Cook until begins to thicken. Once thickened I turn off heat and stir in the cheese and whisk until melted.
  • Step 2
    Once melted add the 8 cups of broccoli and cauliflower. Stir and turn heat back to medium and add pasta if using. Simmer until heated through and serve with bacon if desired or more cheese...
