shawn's shrimp and corn soup

My son, Shawn, who is an excellent cook, made this up. We love it for Christmas!

Ingredients

  • 1/2 stick butter
  • 1 package chopped seasonngs, onion, bell pepper, celery
  • 2 tablespoons minced garlic
  • 1 can mild rotel tomatoes, drained
  • 2 1/2 pints heavy cream
  • 2 pints milk
  • 2 pounds shrimp
  • 1 pound crabmeat
  • - cayenne pepper to taste
  • - cajun seasoning to taste
  • 2 cans whole kernal corn, drained
  • 2 cans creamed corn

How To Make shawn's shrimp and corn soup

  • Step 1
    Saute' butter, sesonings mix, garlic, Rotel, a few shrimp and some crab meat (save most of shrimp and crab for later!). Tne npuree and set aside.
  • Step 2
    Boil heavy cream and milk together to make soup base. Now add 2 cans whole kernal corn, and 2 cans creamed corn.
  • Step 3
    Saute' 2 pounds shrimp and 1 pound crabmeat. Season to taste with cajun seasonings or red pepper.
  • Step 4
    Combine the soup base, seasoning base, and sauted shrimp and crab. Cook over low heat until desired thickness. Can add chicken stock and milk if needs to be thinned.
