Creamy mac and cheese veggie soup.

Ingredients

  • 1 cup fresh mushroom, sliced
  • 2 stalks celery, thinly sliced
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1/4 cup butter
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1/4 cup freshly grated Parmesan cheese
  • 4 ounces shell pasta
  • 1 pound Velveeta cheese, cubed
  • 1 cup heavy cream
  • salt and pepper, to taste
  • 1 cup chicken stock

How To Make serendipity soup

  • Step 1
    Cook the pasta in boiling salted water. Do the same with the broccoli and cauliflower. Drain both.
  • Step 2
    Place the butter in a large pot and let it melt. Add the mushroom, onion, celery, and garlic. Cook about 10 minutes.
  • Step 3
    Add the chicken stock, Parmesan cheese, Velveeta cheese, and heavy cream. Cook until the cheese is melted.
  • Step 4
    Stir in the broccoli, cauliflower, and pasta. Taste and season with salt and pepper.
