Ingredients

  • 1/4 cup chopped onion
  • 3 tablespoons butter
  • 1/4 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 2 cups milk
  • 1 can 14 1/2 oz. chicken broth
  • 1/2 cup shredded carrot
  • 1/2 cup finely chopped celery
  • 1 1/2 cups shredded cheddar cheese
  • 3/4 cup shredded part skim mozzarella cheese

How To Make savory cheese soup

  • Step 1
    In a large saucepan, saute onion in butter until tender.
  • Step 2
    Stir in the flour, salt, pepper and garlic powder until smooth.
  • Step 3
    Gradually add milk. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened.
  • Step 4
    Meanwhile, bring chicken broth to a boil in a small saucepan. Add carrot and celery; simmer, uncovered, for 5 minutes or until vegetables are tender.
  • Step 5
    Add to milk mixture and stir until blended. Reduce heat; add cheeses. Cook and stir until cheese is melted.
