I was hungry for sausage gravy today but wanted to try something new. So I made a pot of soup. It is a perfect meal to warm you up on a cold, dreary day. Serve with biscuits and a tossed salad and you have a wonderful complete meal.

Ingredients

  • 1/2 pound sausage, any kind
  • 4 tablespoons butter
  • 5 tablespoons flour
  • 2 cups milk
  • 3 cups water
  • 3 - chicken bouillon cubes
  • 1 - onion, chopped
  • 4 small potatoes
  • 8 ounces cream cheese, cut into cubes

How To Make sausage and potato soup

  • Step 1
    Cube potatoes, peeled or unpeeled, into bite size pieces. Combine potatoes, onion, water and bouillon cubes. Boil until potatoes are slightly under done. Do not drain!
  • Step 2
    While potatoes are cooking brown sausage until done. Add butter and flour to sausage. Stir well so flour and butter is well incorporated with the meat. Stir in milk. Bring mixture to boiling. This will be fairly thick.
  • Step 3
    Add meat mixture to cooked potato mixture. Add cubed cream cheese and stir until it is completely melted. Add seasoning to taste. The type of sausage you use will make a big difference on the flavor.
