Ingredients

  • 4 c
    chicken broth
  • 1 medium
    yellow onion, chopped
  • 3 medium
    leeks, chopped whites only
  • 6 medium
    potatoes, medium, cubed
  • 1 c
    heavy cream
  • 1 dash(es)
    ground chervil
  • 1/2 tsp
    salt and pepper
  • 1 Tbsp
    butter
  • 1 Tbsp
    ground parsley

How to Make Potatoe Leek Soup

Step-by-Step

  1. Simmer chicken broth, leeks, onions and cubed potatoes for 20 minutes.
  2. Mash some of the onions and potatoes to make a cloudy stew.
  3. Add heavy cream, chervil, salt, pepper and parsley to soup. Stir and eat.
  4. Sometimes I use tarragon instead of chervil for a variety in flavor.
