Ingredients

  • 6 - potatoes, peeled & cut into bite-sized pieces
  • 2 small onions, chopped
  • 1 - carrot, pared & sliced
  • 1 - celery stalk, sliced
  • 2 teaspoons chicken base or granules
  • 1 tablespoon parsley flakes
  • 5 cups water or chicken broth/stock
  • 1/3 cup butter/margarine
  • 2 cans (12 oz) evaporated milk

How To Make potato soup - mw (crock pot)

  • Step 1
    Put all ingredients except milk in crock pot.
  • Step 2
    Cover and cook on low 10 to 12 hours (or High 3 to 4 hours).
  • Step 3
    Stir in evaporated milk during the last hour of cooking.
  • Step 4
    Before serving, you can puree soup using a blender, food processor or imersion blender, if desired, or you can leave it chunky.
  • Step 5
    Garnish with diced ham, shredded cheese and sliced green onions. The question is croutons . . . or no croutons??
  • Step 6
    Note: Feeling lazy? That's OK - take a 2 pound bag of frozen cubed hash browns and thaw before using in this recipe.
