My dad used to make this potato soup when I was growing up. I've tweaked it a bit here & there. He fixed skillet corn bread with it. Good comfort food!

Ingredients

potatoes cut in bite size pieces
1 large
onion chopped
1
carrot, peeled & sliced
1 Tbsp
parsley
2
chicken bouillon cubes
1 1/2 tsp
salt
1 Tbsp
butter
1 13 oz
can evaporated milk
1 pkg
bacon ( i like the thick cut) broke up
1-2 c
cheddar cheese, shredded
chopped chives
4 c
water

How to Make Potato Soup

Step-by-Step

  • 1Put everything in a pot except milk, cheese,chives & bacon.
  • 2Cover & cook on simmer for 3-4 hrs or until carrots are cooked. Stir in milk & some of the bacon during last hr.
  • 3Add cheese.chives & more bacon for garnish.
