My dad used to make this potato soup when I was growing up. I've tweaked it a bit here & there. He fixed skillet corn bread with it. Good comfort food!

  • 6
    potatoes cut in bite size pieces
  • 1 large
    onion chopped
  • 1
    carrot, peeled & sliced
  • 1 Tbsp
  • 2
    chicken bouillon cubes
  • 1 1/2 tsp
  • 1 Tbsp
  • 1 13 oz
    can evaporated milk
  • 1 pkg
    bacon ( i like the thick cut) broke up
  • 1-2 c
    cheddar cheese, shredded
  • ·
    chopped chives
  • 4 c

How to Make Potato Soup


  1. Put everything in a pot except milk, cheese,chives & bacon.
  2. Cover & cook on simmer for 3-4 hrs or until carrots are cooked. Stir in milk & some of the bacon during last hr.
  3. Add cheese.chives & more bacon for garnish.
