My dad used to make this potato soup when I was growing up. I've tweaked it a bit here & there. He fixed skillet corn bread with it. Good comfort food!

Ingredients

  • 6 - potatoes cut in bite size pieces
  • 1 large onion chopped
  • 1 - carrot, peeled & sliced
  • 1 tablespoon parsley
  • 2 - chicken bouillon cubes
  • 1 1/2 teaspoons salt
  • 1 tablespoon butter
  • 1 13 ounces can evaporated milk
  • 1 package bacon ( i like the thick cut) broke up
  • 1-2 cup cheddar cheese, shredded
  • - chopped chives
  • 4 cups water

How To Make potato soup

  • Step 1
    Put everything in a pot except milk, cheese,chives & bacon.
  • Step 2
    Cover & cook on simmer for 3-4 hrs or until carrots are cooked. Stir in milk & some of the bacon during last hr.
  • Step 3
    Add cheese.chives & more bacon for garnish.
