potato soup
My dad used to make this potato soup when I was growing up. I've tweaked it a bit here & there. He fixed skillet corn bread with it. Good comfort food!

Ingredients
- 6 - potatoes cut in bite size pieces
- 1 large onion chopped
- 1 - carrot, peeled & sliced
- 1 tablespoon parsley
- 2 - chicken bouillon cubes
- 1 1/2 teaspoons salt
- 1 tablespoon butter
- 1 13 ounces can evaporated milk
- 1 package bacon ( i like the thick cut) broke up
- 1-2 cup cheddar cheese, shredded
- - chopped chives
- 4 cups water
How To Make potato soup

Step 1Put everything in a pot except milk, cheese,chives & bacon.

Step 2Cover & cook on simmer for 3-4 hrs or until carrots are cooked. Stir in milk & some of the bacon during last hr.

Step 3Add cheese.chives & more bacon for garnish.
