Potato Leek Soup

got this from a friend, everyone who tries it loves it. The leeks give it a great flavor!!

onion, chopped
8 medium
potatoes, thinly sliced
3 1/2 c
chicken broth
1 c
heavy cream
sal & pepper to taste
3 large
leeks, cleaned an chopped


1place butter, leeks an onion in saucepan over low to medium heat. Cook till tender and carmelized. Add Potatoes and broth and cook till tender.
2using a potato masher slightly mash the potatoes an leeks up, leaving chunks as you'd like, to make soup
3stirring continually add cream, salt an pepper. Cook for 15 more minutes on low
