This is my favorite soup. I will make homemade bread to go with it. YUM!!

Ingredients

potatoes, diced
2 c
shredded cheddar cheese
1 medium
onion, diced
2 c
broccoli, chopped
3 Tbsp
Butter
3 1/2 Tbsp
flour
1-2 tsp
Crushed red pepper
3 c
Milk

How to Make Potato Broccoli and Cheddar Soup

Step-by-Step

  • 1Peel and dice potatoes, Cook until done. Pour potatoes once done into a bowl and cover, reserve 1 cup of potato water, set aside. In pan melt butter, cook onion til tender. Add flour and red pepper, this will be a paste, cook and stir for 4 minutes. Add milk and potato water, whisk until paste is well blended. Add broccoli and cheese and cook over low heat for about 30 minutes to an hour. When i have left over chicken i add it to this soup.
  • 2If you want to save time you can use canned diced potatoes and just start from making the pasteand increase your milk to 4 cups.
