This is my favorite soup. I will make homemade bread to go with it. YUM!!

Ingredients

  • 6-8 - potatoes, diced
  • 2 cups shredded cheddar cheese
  • 1 medium onion, diced
  • 2 cups broccoli, chopped
  • 3 tablespoons Butter
  • 3 1/2 tablespoons flour
  • 1-2 teaspoon Crushed red pepper
  • 3 cups Milk

How To Make potato broccoli and cheddar soup

  • Step 1
    Peel and dice potatoes, Cook until done. Pour potatoes once done into a bowl and cover, reserve 1 cup of potato water, set aside. In pan melt butter, cook onion til tender. Add flour and red pepper, this will be a paste, cook and stir for 4 minutes. Add milk and potato water, whisk until paste is well blended. Add broccoli and cheese and cook over low heat for about 30 minutes to an hour. When i have left over chicken i add it to this soup.
  • Step 2
    If you want to save time you can use canned diced potatoes and just start from making the pasteand increase your milk to 4 cups.
