  • 1.5 lb
    broccoli florets
  • 1
    garlic clove, minced
  • 1 large
    sweet onion, chopped
  • 2 Tbsp
  • 1-2 large
  • 1 qt
    chicken or beef broth
  • ·
    salt and pepper to taste
  • 1 dash(es)
    red pepper, crushed
  • 1 c
    half and half
  • 1 dash(es)
    ground nutmeg
  • ·
    bacon bits
  • ·
    broccoli florets, cooked

How to Make Pinky's Cream of Broccoli Soup & Garlic


  1. Saute onion and garlic in butter until the onions become transparent.
  2. Add chopped potatoes, broccoli, broth, salt, pepper and red pepper.
  3. Heat to boiling and simmer for about a half hour.
  4. Pour the mixture (about one third at a time) into the blender and pulse six or seven times for each batch.
  5. Place blended soup in crockpot and add half and half and nutmeg.
  6. Heat on low for another half hour and then let sit until dinner.
  7. Taste for seasoning; garnish with broccoli florets and bacon bits.
