broccoli florets
garlic clove, minced
1 large
sweet onion, chopped
2 Tbsp
1-2 large
1 qt
chicken or beef broth
salt and pepper to taste
1 dash(es)
red pepper, crushed
1 c
half and half
1 dash(es)
ground nutmeg
bacon bits
broccoli florets, cooked

How to Make Pinky's Cream of Broccoli Soup & Garlic


  • 1Saute onion and garlic in butter until the onions become transparent.
  • 2Add chopped potatoes, broccoli, broth, salt, pepper and red pepper.
  • 3Heat to boiling and simmer for about a half hour.
  • 4Pour the mixture (about one third at a time) into the blender and pulse six or seven times for each batch.
  • 5Place blended soup in crockpot and add half and half and nutmeg.
  • 6Heat on low for another half hour and then let sit until dinner.
  • 7Taste for seasoning; garnish with broccoli florets and bacon bits.
