Last night after dinner my hubby made a request for his dinner tonight - he wanted my potato soup. I just finished making it and it tastes so good. I am trying to wait until he gets in to have a bowl. I have made this so long that I have forgotten where I got the recipe. I guess that it doesn't really matter I always adapt it to our tastes anyway.

Ingredients For paulette's potato soup

  • 2 Tbsp
    butter
  • 1 Tbsp
    vegetable oil
  • 1
    thinly sliced onion
  • 2
    cloves garlic minced
  • 1 lb
    potatoes, pared, and diced
  • 1 c
    diced turnip
  • 2 can
    chicken broth
  • 1 tsp
    celery seed
  • salt to taste
  • 1/4 tsp
    black pepper
  • 1 1/2 c
    light cream
  • 1/2 c
    milk
  • 1 tsp
    basil
  • 1 tsp
    garlic powder

How To Make paulette's potato soup

    In medium saucepan heat butter and oil until butter is melted. Add onion and garlic and cook until onion is soft about 5-7 minutes. Add pototoes,turnip, chicken broth and seasonings. Bring to a boil over high heat. Reduce heat and cover and let simmer 25-30 minutes.

    In blender container process potatoes and turnips in batches until pureed. Return to saucepan, stir in cream and milk and cook about 5 minutes. You will have to watch this closely because it may scorch easily. I usually take out what I think that we will eat at one time and heat in microwave. You may add a little more milk if soup becomes too thick.
