Last night after dinner my hubby made a request for his dinner tonight - he wanted my potato soup. I just finished making it and it tastes so good. I am trying to wait until he gets in to have a bowl. I have made this so long that I have forgotten where I got the recipe. I guess that it doesn't really matter I always adapt it to our tastes anyway.

Ingredients

  • 2 Tbsp
    butter
  • 1 Tbsp
    vegetable oil
  • 1
    thinly sliced onion
  • 2
    cloves garlic minced
  • 1 lb
    potatoes, pared, and diced
  • 1 c
    diced turnip
  • 2 can(s)
    chicken broth
  • 1 tsp
    celery seed
  • ·
    salt to taste
  • 1/4 tsp
    black pepper
  • 1 1/2 c
    light cream
  • 1/2 c
    milk
  • 1 tsp
    basil
  • 1 tsp
    garlic powder

How to Make Paulette's Potato Soup

Step-by-Step

  1. In medium saucepan heat butter and oil until butter is melted. Add onion and garlic and cook until onion is soft about 5-7 minutes. Add pototoes,turnip, chicken broth and seasonings.
    Bring to a boil over high heat. Reduce heat and cover and let simmer 25-30 minutes.
  2. In blender container process potatoes and turnips in batches until pureed. Return to saucepan, stir in cream and milk and cook about 5 minutes. You will have to watch this closely because it may scorch easily. I usually take out what I think that we will eat at one time and heat in microwave. You may add a little more milk if soup becomes too thick.
