Last night after dinner my hubby made a request for his dinner tonight - he wanted my potato soup. I just finished making it and it tastes so good. I am trying to wait until he gets in to have a bowl. I have made this so long that I have forgotten where I got the recipe. I guess that it doesn't really matter I always adapt it to our tastes anyway.

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • 1 - thinly sliced onion
  • 2 - cloves garlic minced
  • 1 pound potatoes, pared, and diced
  • 1 cup diced turnip
  • 2 cans chicken broth
  • 1 teaspoon celery seed
  • - salt to taste
  • 1/4 teaspoon black pepper
  • 1 1/2 cups light cream
  • 1/2 cup milk
  • 1 teaspoon basil
  • 1 teaspoon garlic powder

How To Make paulette's potato soup

  • Step 1
In medium saucepan heat butter and oil until butter is melted. Add onion and garlic and cook until onion is soft about 5-7 minutes. Add pototoes, turnip, chicken broth and seasonings. Bring to a boil over high heat. Reduce heat and cover and let simmer 25-30 minutes.
  • Step 2
In blender container process potatoes and turnips in batches until pureed. Return to saucepan, stir in cream and milk and cook about 5 minutes. You will have to watch this closely because it may scorch easily. I usually take out what I think that we will eat at one time and heat in microwave. You may add a little more milk if soup becomes too thick.
