not your usual broccoli cheese soup

Usually you think of a thick orange soup with green pieces in it. Try this for a little different twist to an old favorite. We always had this around the holidays.

Ingredients

  • 3 cups water
  • 1 pound chopped broccoli, fresh or frozen
  • 1 large onion
  • 4 - chicken bouillion cubes
  • WHITE SAUCE:
  • 1/4 cup butter
  • 2 cups milk, 2% or whole
  • 4-5 tablespoons flour
  • 1/2 teaspoon salt
  • 8 ounces cream cheese,, cubed

How To Make not your usual broccoli cheese soup

  • Step 1
    In a large sauce pan cook broccoli and onion in the water and bouillon cubes. Boil until tender but not mushy. Do not drain!
  • Step 2
    While the vegetables are cooking melt butter in a medium sauce pan. Stir in flour and salt. Add the milk while whisking. Whisk until smooth. Let it come to a boil continuing to whisk. This will be thick.
  • Step 3
    When vegetables are tender add white sauce directly into vegetables. Stir together. Add the cubed cream cheese. Continue stirring until the cheese is melted. Serve.
