Ingredients

  • 1 pound cremini mushrooms, sliced
  • 3/4 cup butter
  • 6 tablespoons all-purpose flour
  • 1 teaspoon dry mustard
  • salt
  • 3 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1/4 cup dry sherry
  • 1/4 cup finely chopped chives
  • 2 tablespoons sherry vinegar
  • 2 cups fresh baby arugula, for garnish

How To Make mushroom chive bisque with arugula

  • Step 1
    Place the butter in a large pot. Add the mushrooms and some salt. Cook until the mushrooms are a bit limp.
  • Step 2
    Add the flour and mustard powder and stir well.
  • Step 3
    Add the chicken stock and dry sherry. Cook for about 3 minutes.
  • Step 4
    Add the heavy cream and chives. Bring to a boil and reduce to a simmer. Add the vinegar and cook 3 more minutes.
  • Step 5
    Ladle into bowls and top with fresh arugula.
