Ingredients
- 1 pound cremini mushrooms, sliced
- 3/4 cup butter
- 6 tablespoons all-purpose flour
- 1 teaspoon dry mustard
- salt
- 3 cups chicken broth
- 1 1/2 cups heavy cream
- 1/4 cup dry sherry
- 1/4 cup finely chopped chives
- 2 tablespoons sherry vinegar
- 2 cups fresh baby arugula, for garnish
How To Make mushroom chive bisque with arugula

Step 1Place the butter in a large pot. Add the mushrooms and some salt. Cook until the mushrooms are a bit limp.

Step 2Add the flour and mustard powder and stir well.

Step 3Add the chicken stock and dry sherry. Cook for about 3 minutes.

Step 4Add the heavy cream and chives. Bring to a boil and reduce to a simmer. Add the vinegar and cook 3 more minutes.

Step 5Ladle into bowls and top with fresh arugula.
