Good and not much trouble

1 medium
head of cauliflower
2 Tbsp
chopped onion
salt and pepper,to taste
32 oz
chicken broth (canned or bouillion)
2 slice
crisp bacon
3 Tbsp
chopped chives
3 oz
cheddar cheese, shredded
1/2 c
or more light cream
2 Tbsp


1Steam cauliflower until tender. Then,drain,place in large baking dish,drizzle w/olive or some other oil,and,broil til golden brown.
2Heat a little oil and saute the chopped onions til done but not browned in deep pot.Add the drained browned cauliflower,the chicken broth and simmer til all is tender and blended well.Remove 1/2 mixture and puree ,then,add back to pot.
3Add cheese,cream,chives and bacon and stir til cheese is melted.Lastly,add 2 Tbsp.butter and stir til melted and serve.
