This is a great soup to have for dinner with a salad and some crusty warm bread! I love taking the leftovers to work for lunch the next day! mmmmmmm!

Ingredients
- 4 large baking potatoes
- 2/3 cup butter
- 6 cups milk
- 4 - green onions, chopped
- 12 slices bacon, cooked and crumbled
- 1 cup sour cream
- 1 1/4 cups shredded cheddar cheese
- 2/3 cup all purpose flour
- - salt and pepper to taste
How To Make maureen's baked potato soup

Step 1Bake potatoes. Cut in halves and scoop out pulp.

Step 2Melt butter in large pot over low heat. Add flour. Cook until smooth, stirring constantly.Add milk. Cook over medium heat until thick and bubbly.

Step 3Add salt, pepper, potato pulp,2 tablespoons of the green onions, 1/2 the bacon and 1 cup of the cheese. Cook until heated through. Stir in sour cream.

Step 4Serve topped with remaining green onions, bacon & cheese.

Step 5The prep time in this dish is so long because of the baked potatoes, but you can really shorten the time by microwaving them. :-) IDO!
