mac and cheese soup

this recipe is well over 45 yrs old [i bet the first i ever made] and it was done while we were out camping i was in charge of makin lunch[boxed mac and cheese] over an open fire... i was not payin attention and mac got overcooked and ya could not even drain it...so this was born!!!!!!over the yrs i have made changes but still when i want somethin fast i go to this.please try it!!!!!

Ingredients
- 1 package yur fav boxed mac and cheese +extra cheese packet
- 1/2 stick margarine
- 1/2 medium onion,chopped
- 1/2 cup mixed color bell peppers,chopped
- 1 medium rib celery,chopped
- 1 medium carrot,grated
- 1 package [8 oz] sliced mushrooms
- - milk,as needed
- 1 large fresh tomato,sliced
- - sour cream, lite
How To Make mac and cheese soup

Step 1put margarine in med size pan melt once melted add onions,peppers,celery,carrots cook bout 10 min add mushrooms cook 5 min more than add 2 qts water

Step 2bring to boil add mac from pkg.... boil bout 15 min[mac will be very soft but not mush]add salt and pepper if needed...add both cheese packets mix well add milk if needed

Step 3to serve laddle soup in soup bowl add tomato slice and put dollop of sour cream on it... and ENJOY!!!!
