My favorite potato soup recipe and so easy to prepare

Ingredients

4 large
baking potatoes
2/3 c
butter, room temperature
2/3 c
flour
6 c
milk
3/4 tsp
salt
1/3 tsp
pepper
1 c
shredded cheddar cheese
12 slice
bacon ( cooked and crumbled )
4
green onions ( chopped finely )
1
sour cream ( 8 oz )

How to Make Loaded Baked Potato Soup

Step-by-Step

  • 1Bake potatoes 400 degrees for 1 hour. Let cool. Cut in half lengthwise. Scoop out and reserve.
  • 2Melt butter in large pot over low heat. Gradually add flour, stirring until smooth.
  • 3Add milk, cook until thick and bubbly. Stir in potatoes, salt & pepper, cheese, bacon and onions.
    Cook until heated well but DO NOT BOIL.
    Stir in sour cream.
