My favorite potato soup recipe and so easy to prepare

Ingredients

  • 4 large baking potatoes
  • 2/3 cup butter, room temperature
  • 2/3 cup flour
  • 6 cups milk
  • 3/4 teaspoon salt
  • 1/3 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 12 slices bacon ( cooked and crumbled )
  • 4 - green onions ( chopped finely )
  • 1 - sour cream ( 8 oz )

How To Make loaded baked potato soup

  • Step 1
    Bake potatoes 400 degrees for 1 hour. Let cool. Cut in half lengthwise. Scoop out and reserve.
  • Step 2
    Melt butter in large pot over low heat. Gradually add flour, stirring until smooth.
  • Step 3
    Add milk, cook until thick and bubbly. Stir in potatoes, salt & pepper, cheese, bacon and onions. Cook until heated well but DO NOT BOIL. Stir in sour cream.
