leek & potato soup

I make this soup quite often as my family love it.It goes well with plain Irish soda bread and being Irish whats not to like about potatoes lol!!

Ingredients
- 4 tablespoons butter
- 2 pounds potatoes (yukon)
- 1 pound leeks (white & pale green only)washed & cleaned good
- 1 - onion (chopped)
- 2 - celery sticks( chopped)
- 5 cups chicken stock
- 21/2 cups whole milk
- 1 - bay leaf
- 2 tablespoons minced parsley
- - salt & white pepper to taste
- 1/2 cup half &half
- 1/4 cup chopped chives (to sprinkle on top)
How To Make leek & potato soup

Step 1In large saucepan melt butter over medium heat.Add vegetables cover pot and let cook 5-7mins.stirring often.Add chicken stock and 1/2cup milk bay leaf,parsley,salt and pepper.Turn down heat to low cover and let simmer till vegetables are tender about 25-30mins. Remove the bay leaf and let soup cool for 10-15mins.In a blender add soup in batches and puree till smooth.Return to pot and reheat over medium heat,Stir in remaining 2cups milk reheat till nice and hot.Serve in warm soup bowls and swirl in a tablespoon of half & half sprinkle with chopped chives. Enjoy! :)
