keto friendly broccoli cheese soup

Found the basis for this recipe on my Pinterest from "happilyunprocessed". Made very little changes to it to make it a little thinner. Info per serving Calories -337 Fat - 32 grams Net Carbs - 6 grams Protein - 5 grams

Ingredients

  • 6 tablespoons grass fed butter
  • 1/2 cup chopped yellow onion
  • 1/2 cup julliened carrots
  • 2 tablespoons red mill paleo flour
  • 3 cups warm chicken broth
  • 1 cup warm water
  • 2 cups warm heavy whipping cream
  • 2 tablespoons minced garlic
  • 4 cups chopped fresh broccoli
  • 2 cups shredded cheddar cheese.
  • 2 tablespoons cream cheese, room temp

How To Make keto friendly broccoli cheese soup

  • Step 1
    Melt the butter in a frying pan and add the chopped onion and carrots. Saute for 3 minutes. Add garlic and continue the sauté. Salt and pepper generously. Then slowly add the flour, whisking to blend.
  • Step 2
    When flour is added and mixed thoroughly, slowly add the chicken broth and water. Whisk to incorporate without breaking. Take pan off of the heat and slowly add the cream, whisking as you add it.
  • Step 3
    When the cream is completely added and incorporated, put the pan back on the heat on low and add the cream cheese, whisking. When that is incorporated start adding the shredded cheese, a half cup at a time and making sure all of it melts before adding more. Keep at it until all of the cheese has been added. Salt and pepper the soup to taste.
  • Step 4
    At this point I add a little more chicken broth if the soup needs to be thinned. Then I pour all of it into a crock pot and then add the chopped broccoli. Turn the pot on high for two hours and then down to low or warm.
