This soup is so good, rich, creamy, chunky... just love it!! Oh, did I mention super easy to make....:-)

Ingredients

  • 2 - medium size onions chopped
  • 2 tablespoons olive oil, extra virgin
  • 2 tablespoons good curry madras
  • 2 cups chicken broth
  • 1 can tomatoes, canned and chopped, with liquid
  • ½ cup heavy cream
  • 1 can peaches, canned
  • - salt and pepper for taste
  • - 8 oz shrimps - optional

How To Make indian curry soup

  • Step 1
    heat up the oil and add the onions until clear add the curry and mix.
  • Step 2
    add the tomatoes and broth make it boil and add the heavy cream.
  • Step 3
    chop up 6 halfs of peaches - no juice - add to the soup. Reduce heat taste with salt and a dash of pepper.
  • Step 4
    Serve with shredded lettuce in the bottom of the bowl and good bread.. Enjoy!!
