- 10 ounces package frozen chopped broccoli
- 3 tablespoons butter
- 1/4 medium onion, finely chopped
- 1/4 cup flour
- 16 ounces half-and-half cream
- 14 ounces chicken broth
- 8 ounces shredded mild Mexican cheese
How To Make incredible broccoli cheese soup

Step 1Punch several holes in the broccoli package and microwave for 5 minutes. Turn the package and microwave for an additional 4 minutes. Leave in the microwave for 3 minutes.

Step 2In a large saucepan, melt butter and sauté onion, but do not brown. Add flour, stir, and gradually add cream, chicken broth, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Step 3Stir constantly and heat until the mixture is slightly thick. DO NOT let the mixture come to a boil. Add cheese, stir, and heat until cheese melts. Add cooked broccoli. Serve piping hot.
