Hearty Potato Soup
7 mediumpotatoes, peeled and diced
2 can(s)cream of chicken or mushroom soup
1 mediumonion, chopped
8 ozcream cheese, room temperature
1 tspgarlic powder
1/2 tspsalt and pepper or to taste
How to Make Hearty Potato Soup
- In large saucepan, boil potatoes, butter, garlic powder, salt, pepper and onions in just enough water to cover, till tender. Do NOT drain. Cut cream cheese in cubes and stir in til melted. Stir soups into mixture until blended. Add milk and let simmer for 30-45 minutes on lowest setting. Stir to keep from sticking occasionally.
- Serve with crumbled bacon, grated cheese, chopped green onions and seasoned crackers.
