My family won't eat pea soup or bean soup, so coming up with something for that leftover ham bone was a bit of a challenge. Creamy potato soup was the answer...

Ingredients

  • 10 cups water
  • 1 - ham bone
  • 8 - potatoes, large, diced
  • 1 - white onion, large, diced
  • 1 - celery heart, diced
  • 3 tablespoons chicken base
  • 3 cloves garlic, minced
  • 1 tablespoon black pepper
  • 1/8 teaspoon cumin
  • 1/8 teaspoon clove
  • 1 tablespoon butter
  • 1 pint heavy whipping cream

How To Make ham & potatoe soup

  • Step 1
    Put water and ham bone in 5-quart saucepan over medium heat. Cover & simmer for about 30 minutes or until meat is easily removed from the bones.
  • Step 2
    As ham bone is cooking, peel and dice potatoes into 1/2 inch cubes. Dice onion and celery heart.
  • Step 3
    Remove ham and bone from water. DO NOT use a strainer as you will be using the remaining water.
  • Step 4
    Add chicken base, garlic, pepper, cumin, clove and butter to sauce pan. Stir well.
  • Step 5
    Add potatoes, onion, and celery. Cut any large pieces of ham into 1/2 inch pieces and add to water.
  • Step 6
    Simmer for 30 minutes or until potatoes are tender.
  • Step 7
    Add heavy whipping cream, simmer for 5 - 10 minutes.
  • Step 8
    Garnish with sour cream, chives or shredded cheese. Serve with crusty rolls.
