ham & cheese soup

This is based on a recipe from my favorite restaurant when I was growing up. Their food was amazing & of the utmost quality. The owner also had a flair for making delicious comfort food. This is so nourishing, and rich without being sickening. One of our absolute favorites on a cold day! Great as a meal or first course.

Ingredients

  • 1/3 cup butter
  • 1/3 cup diced onion
  • 1/3 cup flour
  • 5 cups milk
  • 1 teaspoon salt
  • 1/2 pound deli ham, cut into bite-sized chunks
  • 2 tablespoons parsley, fresh (or more)
  • 1 dash hot sauce or 1 tsp. dijon mustard
  • 2 cups sharp cheddar cheese, shredded (or mix of cheeses)
  • 1 - tsp. thyme, fresh
  • 1 - dash nutmeg

How To Make ham & cheese soup

  • Step 1
    Melt butter and add onion, sauteeing until soft. Add flour & mix very well for a few minutes. Then add milk & salt nutmeg, and thyme. Cook on medium heat for about 20 minutes, making sure to stir frequently & not scald. Note: I like to sautee the ham first too, to get it a little bit brown and flavorful.
  • Step 2
    Turn heat closer to a simmer. Add ham, parsley & hot sauce or mustard. Stir in well, then add the cheddar cheese slowly until melted.
