ham & cheese soup
This is based on a recipe from my favorite restaurant when I was growing up. Their food was amazing & of the utmost quality. The owner also had a flair for making delicious comfort food. This is so nourishing, and rich without being sickening. One of our absolute favorites on a cold day! Great as a meal or first course.

Ingredients
- 1/3 cup butter
- 1/3 cup diced onion
- 1/3 cup flour
- 5 cups milk
- 1 teaspoon salt
- 1/2 pound deli ham, cut into bite-sized chunks
- 2 tablespoons parsley, fresh (or more)
- 1 dash hot sauce or 1 tsp. dijon mustard
- 2 cups sharp cheddar cheese, shredded (or mix of cheeses)
- 1 - tsp. thyme, fresh
- 1 - dash nutmeg
How To Make ham & cheese soup

Step 1Melt butter and add onion, sauteeing until soft. Add flour & mix very well for a few minutes. Then add milk & salt nutmeg, and thyme. Cook on medium heat for about 20 minutes, making sure to stir frequently & not scald. Note: I like to sautee the ham first too, to get it a little bit brown and flavorful.

Step 2Turn heat closer to a simmer. Add ham, parsley & hot sauce or mustard. Stir in well, then add the cheddar cheese slowly until melted.
