ham and potato soup

I experimented and this came out great today. The pot emptied very quickly.

Ingredients

  • 8 - potatoes, peeled and diced
  • 1 can clear chicken broth
  • 2/3 cup diced carrots
  • 2 - stalks celery
  • 1 - bunch green onions
  • 1 - small onion chopped
  • 1 stick butter or margarine
  • 1/4 to 1/2 cup flour
  • 1 quart milk
  • 1 cup half and half
  • 2 teaspoons each seasoning salt and black pepper
  • 8 ounces cubed velveeta cheese, or your fav melting cheese
  • 8 ounces or more. of lean chunked ham

How To Make ham and potato soup

  • Step 1
    in a large pot boil potatoes , drain. put in a bowl and set aside.
  • Step 2
    in a smaller pot, place 1 can chicken broth the ham and all other vegetables, salt and pepper. slowly boil until vegetables are tender.
  • Step 3
    in the large pot you cooked potatoes in place one stick butter, melt over med heat, and slowly wisk in flour to make a rue.
  • Step 4
    add broth/veggies. to rue. add the potatoes. let it all come to a boil. turn heat on low. Mixture should thicken .
  • Step 5
    add the milk, stirring constantly
  • Step 6
    add the velveeta cheese cubes, stirring well
  • Step 7
    now add the half and half slowly.
  • Step 8
    let soup simmer until all is piping hot and creamy consistency.
