My grandmother use to make this soup for us kids all the time, it has gone on to my mother and now myself. Best potato soup around.

Ingredients

  • 3 c
    red potatoes (diced)
  • 2 c
    water
  • 1/2 c
    carrots (chopped)
  • 1/2 c
    onions (chopped)
  • 1 tsp
    parsley
  • 1/2 tsp
    salt
  • 1
    chicken boulin cube
  • ·
    pepper to taste
  • INGREDIENTS AFTER THE TOP PART HAS BEEN COOKED

  • 1 1/2 c
    milk
  • 2 Tbsp
    flour
  • 1/2 c
    butter
  • 1/2 lb
    velvetta cheese (cubed)

How to Make Grandma's Famous Cheese Potato Soup

Step-by-Step

  1. Mix all ingredients on the top and cover simmer for 15 minutes.
  2. Add ingredients after the top has been cooked . Stir slowly for 10 minutes on low low temp. Remove and serve. I sometimes add some bacon that I fry up also and put croutons on the top with a sprinkle of cheese.
