/ Cream Soups
1Peel potatoes, dice, and boil in water till tender.
2While potatoes are boiling make a rue, of butter and flour in a sauce pan.
3Slowly add milk to the rue, stirring until it thickens. If to thick for your tasted add additional milk till it is the consistency you prefer your soup.
4Drain potatoes, add to cream sauce. Season to taste. Add Cheddar cheese to each bowl as prefered.
