1Place vegetables in large pot. Add seasonings and broth. Vegetables should just be covered. If need be add water.
2Bring to a boil, turn heat down and simmer until potatoes are completely done. Use a fork to mash potatoes if they are in large chunks (but I like to leave this soup a bit chunky). Add milk to thin to desired consistency.
3Garnish with crisp bacon bits, shredded cheese, or sour cream if you like.
