good, fast, and home made potato soup

This is my recipe. Mom made hers with speatzels and cooked it a long time. I get the potato soup flavor with this simple, everyday version.

Ingredients

  • SOUP:
  • 4 medium potatoes, peeled and sliced
  • 2 small onions, chopped
  • 1 sprig celery, chopped or 1/2 teaspoon celery salt
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly grated black pepper
  • 4 cups chicken broth or bouillon (you can use just water but the flavor is better with broth)
  • 1-3 cup milk to thin soup to your liking
  • OPTIONAL GARNISH:
  • - crisp bacon bits, shredded cheese, or sour cream to garnish, optional

How To Make good, fast, and home made potato soup

  • Step 1
    Place vegetables in large pot. Add seasonings and broth. Vegetables should just be covered. If need be add water.
  • Step 2
    Bring to a boil, turn heat down and simmer until potatoes are completely done. Use a fork to mash potatoes if they are in large chunks (but I like to leave this soup a bit chunky). Add milk to thin to desired consistency.
  • Step 3
    Garnish with crisp bacon bits, shredded cheese, or sour cream if you like.
