Ingredients

  • 6 - tomatoes
  • 1 - onion, chopped
  • 1 - celery stalk, chopped
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 1/2 teaspoon basil, dried and crushed
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 cup yogurt

How To Make fresh tomato soup

  • Step 1
    Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt; simmer uncovered 30 minutes.
  • Step 2
    Strain to remove tomato skins and seeds.
  • Step 3
    Adjust seasonings and garnish with spoonfuls of yogurt.
  • Step 4
    NOTE: May substitute 2 pounds Italian plum tomatoes in place of fresh tomatoes.
