Feel Better Soup
1 can(s)cream of celery condensed soup
2 can(s)chicken broth or vegetable broth
1stalk celery, chopped
1 mediumcarrot or about 8-10 baby carrots, chopped
1/4 cfrozen peas
1green onion, sliced
1 c(generous) dry wide egg noodles
1/2 tspground black pepper
1 pinchdried thyme
1 pinchdried parsley
How to Make Feel Better Soup
- Mix together the soup and broth in a 2 QT saucepan. Add the carrots celery and onion. Bring to a boil over medium heat, stirring constantly.
- Reduce heat to low, cover and simmer 10-15 minutes until carrots are almost fork tender. Add noodles, herbs and peas. Continue to simmer for 5-10 minutes, until noodles are Al Dente. Remove from heat and let sit 2-3 minutes. Stir and serve.
- *note* The liquid may appear to be separating, that's OK, after its cooled down and stirred it goes to a creamy texture.
