Just what the name says, this soup is perfect if you are feeling under the weather. Light enough to not be over-filling, and hearty enough to keep you satisfied. I made this for the first time when my boyfriends daughter had the flu, now she requests it :)

Ingredients

  • 1 can cream of celery condensed soup
  • 2 cans chicken broth or vegetable broth
  • 1 - stalk celery, chopped
  • 1 medium carrot or about 8-10 baby carrots, chopped
  • 1/4 cup frozen peas
  • 1 - green onion, sliced
  • 1 cup (generous) dry wide egg noodles
  • 1/2 teaspoon ground black pepper
  • 1 pinch dried thyme
  • 1 pinch dried parsley

How To Make feel better soup

  • Step 1
    Mix together the soup and broth in a 2 QT saucepan. Add the carrots celery and onion. Bring to a boil over medium heat, stirring constantly.
  • Step 2
    Reduce heat to low, cover and simmer 10-15 minutes until carrots are almost fork tender. Add noodles, herbs and peas. Continue to simmer for 5-10 minutes, until noodles are Al Dente. Remove from heat and let sit 2-3 minutes. Stir and serve.
  • Step 3
    *note* The liquid may appear to be separating, that's OK, after its cooled down and stirred it goes to a creamy texture.
