ellen's super cream of cauliflower soup
I have made a lot of cream of broccoli soup, but had never tried it with cauliflower instead. So I whipped this up today, improvising as I went. It turned out very tasty!

Ingredients
- 1 medium head cauliflower, cut in small florets
- 1/2 cup carrots, chopped small
- 1/2 cup celery, chopped very small
- 1 - 2 small potatoes, cubed
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 4 cups milk
- 1 cup heavy cream
- 2 cups finely shredded cheddar cheese
- 1 tablespoon minced onion
- 1/2 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon ground nutmeg
- 1 teaspoon salt
- 1/4 teaspoon pepper
How To Make ellen's super cream of cauliflower soup

Step 1Bring a large pot of water to a boil and add the vegetables.

Step 2When vegetables begin boiling, lower the heat, cover, and simmer for 10-15 minutes, or until all the vegetables are tender. Drain and set aside.

Step 3In the same large pot, melt the butter. Then add the flour, stirring until incorporated.

Step 4Slowly add milk and cream, whisking constantly until the mixture thickens.

Step 5Stir in seasonings and add cheese, stirring until melted.

Step 6Add the drained vegetables to the mixture in the pot. Heat over low to medium until soup is hot.

Step 7Serve with bread or crackers of your choice.
