Around our house, soup is the comfort food. Potato soup holds the place as the ultimate comfort. It's fast and easy and lends itself to great variation and side dishes. Paired with grilled ham and cheese sandwiches, a salad or served with a big pan of cornbread, it is always a hit.

Ingredients

  • 5-6 medium potatoes, peeled and cubed
  • 1 small onion, chopped
  • 1 medium carrot, sliced
  • 1 medium celery stalk, sliced
  • 1 can chicken stock (optional, may use water)
  • 1 teaspoon salt (to taste)
  • 1/8 teaspoon pepper (to taste)
  • 2 tablespoons butter (optional)
  • 3/4 cup milk

How To Make easy potato soup

  • Step 1
    Place potatoes, onion, carrots and celery into 2 quart pan.
  • Step 2
    Add chichen broth or water to just almost cover vegetables.
  • Step 3
    Add salt and pepper.
  • Step 4
    Cover and cook on med high heat until vegetables are tender.
  • Step 5
    Uncover, add butter and milk and bring back to a simmer.
  • Step 6
    Serve hot. May garnish with grated cheese.
