Ingredients

  • 1 package Ore-Ida potatoes O'brien
  • 1 package white gravy mix
  • 1 large carton of chicken broth
  • 8 ounces Velveeta cheese
  • - crushed fried bacon or bacon bits (if desired)
  • - additional shredded cheese (if desired)

How To Make easy potato soup

  • Step 1
Let potatoes stand at room temperature for 1 hour.
  • Step 2
Put broth and gravy mix in deep stock pot on low heat.
  • Step 3
Dissolve gravy mix into broth and bring to boil.
  • Step 4
Once gravy is completely dissolved, add potatoes and reduce to low/medium heat.
  • Step 5
Simmer for 30 - 40 minutes until thickened and cream; stirring occasionally.
  • Step 6
Add Velveeta cheese and stir until melted and creamy.
  • Step 7
You may top with bacon pieces and/or shredded cheese if you wish. (I usually don't do this because it is delicious without it. Who needs extra calories!!)
  • Step 8
Delicious with a crusty bread or baquette.
