This hearty, thick, creamy soup is the perfect meal on a chilly evening! It is simple to make with only four ingredients! Serve hot with a crusty bread, and you will be in carbohydrate heaven!

Ingredients
- 1 package Ore-Ida potatoes O'brien
- 1 package white gravy mix
- 1 large carton of chicken broth
- 8 ounces Velveeta cheese
- - crushed fried bacon or bacon bits (if desired)
- - additional shredded cheese (if desired)
How To Make easy potato soup

Step 1Let potatoes stand at room temperature for 1 hour.

Step 2Put broth and gravy mix in deep stock pot on low heat.

Step 3Dissolve gravy mix into broth and bring to boil.

Step 4Once gravy is completely dissolved, add potatoes and reduce to low/medium heat.

Step 5Simmer for 30 - 40 minutes until thickened and cream; stirring occasionally.

Step 6Add Velveeta cheese and stir until melted and creamy.

Step 7You may top with bacon pieces and/or shredded cheese if you wish. (I usually don't do this because it is delicious without it. Who needs extra calories!!)

Step 8Delicious with a crusty bread or baquette.
