Ingredients
- 1/2 cup butter
- 1 - onion, chopped
- 1 package frozen broccoli florets
- 1 - broccoli crown, cut into florets
- 4 14.5 ounces cans chicken broth
- 1 pound loaf velveeta, cubed
- 2 cups heavy cream or half and half
- 1 tablespoon garlic powder
- 2/3 cup cornstarch
- 1 cup water
- - salt and pepper to taste
- 1/4 pound hoffmans super sharp cheddar, cubed (optional)
How To Make easy broccoli cheese soup

Step 1In a stockpot or dutch oven melt butter over medium heat. Cook onion in butter until soft. Stir in broccoli and cover with chicken broth. Simmer until broccoli is tender, about 15 minutes.

Step 2Reduce heat and stir in cheese cubes until melted. Mix in the half and half and garlic powder.

Step 3In a small bowl, stir cornstarch into water until dissolved, then stir into soup. Cook, stirring frequently, until thick. Add salt and pepper to taste.
