This is a perfect soup for a rainy day. It's so easy and very healthy. You can top it with additional cheese or crumbled bacon, if you'd like. Enjoy!

Ingredients

  • 2 large broccoli head, chopped, using mostly the florets
  • 1 small white onion, diced
  • 2 cloves minced garlic
  • 4 cups chicken broth
  • 2 cups half & half
  • 1 teaspoon ground mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 8 ounces sharp white cheddar, grated
  • 4 ounces pepper jack cheese, grated

How To Make crock pot broccoli cheese soup

  • Step 1
    Add the broccoli, onion, garlic, chicken broth, 1/2 & 1/2, and spices to your crockpot. Cover and cook on low for 6 hours, until broccoli is very tender.
  • Step 2
    Turn off the crockpot. Using an immersion blender, blend soup to a smooth consistency.
  • Step 3
    Add cheese to the blended, hot soup and stir until melted and creamy. Serve immediately.
