This is a perfect soup for a rainy day. It's so easy and very healthy. You can top it with additional cheese or crumbled bacon, if you'd like. Enjoy!

Slow Cooker Crock Pot


  • 2 large
    broccoli head, chopped, using mostly the florets
  • 1 small
    white onion, diced
  • 2 clove
    minced garlic
  • 4 c
    chicken broth
  • 2 c
    half & half
  • 1 tsp
    ground mustard
  • 1 tsp
  • 1 tsp
  • 1/4 tsp
    red pepper flakes
  • 8 oz
    sharp white cheddar, grated
  • 4 oz
    pepper jack cheese, grated

How to Make Crock Pot Broccoli Cheese Soup


  1. Add the broccoli, onion, garlic, chicken broth, 1/2 & 1/2, and spices to your crockpot. Cover and cook on low for 6 hours, until broccoli is very tender.
  2. Turn off the crockpot. Using an immersion blender, blend soup to a smooth consistency.
  3. Add cheese to the blended, hot soup and stir until melted and creamy. Serve immediately.
