Creole Style Tomato Soup with Goat's Cheese Dumplings

Looks like I have "adopted' this recipe! Sounds yummy, so it looks like I will be making it next week.....I will let everyone know how it turns out!

olive oil
2 c
yellow onion, chopped
1 c
celery, chopped
1 c
carrots, chopped
2 Tbsp
garlic clove, minced
8 c
tomatoes, fresh and chopped, peeled and seeded
1/2 gal
chicken broth
1/4 c
parsley, finely chopped sprigs
1/4 tsp
cayenne pepper
1/2 c
heavy cream
1 c
goat cheese, room temperature
2 Tbsp
olive oil
2 Tbsp
basil, fresh chopped
wonton wrappers
1/4 c
2 Tbsp
parsley, finely chopped sprigs


1Preheat the fryer.
2In a large sauce pan, heat the olive oil.
3When the oil is hot, saute the onions, celery and carrots; season the vegetables with salt, pepper, and cayenne.
4Saute the vegetables for 4-5 minutes; add the garlic and tomatoes.
5Cook for 3-4 minutes, stirring often.
6Add the chicken broth and bring to a boil; reduce the heat to a simmer and cook for 1 hour and 15 minutes.
7Using a hand-held blender, puree half of the soup.
8Stir in the parsley; re-season with salt and pepper if needed.
9Stir in the heavy cream.
10For the dumplings: In a small mixing bowl, combine the goat cheese, extra-virgin olive oil and basil; mix until the mixture is fully incorporated.
11Season with salt and pepper.
12Spoon 1 tablespoon of the cheese mixture in the center of each wonton wrapper; brush the edges of the wrappers with a little water.
13Bring two corners of the wrappers together and seal, forming a triangle.
14Fry the wontons for 1-2 minutes or until the dumplings are golden and crispy; remove from the fryer and drain on a paper-lined plate.
15Season the dumplings with seasoning salt(s).
16Ladle the soup in a shallow bowl.
17Garnish with the dumplings and parsley.
