    yellow onion, chopped
  • 1 c
    celery, chopped
  • 1 c
    carrots, chopped
  • 2 Tbsp
    garlic clove, minced
  • 8 c
    tomatoes, fresh and chopped, peeled and seeded
  • 1/2 gal
    chicken broth
  • 1/4 c
    parsley, finely chopped sprigs
  • pinch

    cayenne pepper
  • 1/2 c
    heavy cream
  • 1 c
    goat cheese, room temperature
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    basil, fresh chopped
  • 16
    wonton wrappers
  • 1/4 c
  • 2 Tbsp
    parsley, finely chopped sprigs

How to Make Creole Style Tomato Soup with Goat's Cheese Dumplings


  1. Preheat the fryer.
  2. In a large sauce pan, heat the olive oil.
  3. When the oil is hot, saute the onions, celery and carrots; season the vegetables with salt, pepper, and cayenne.
  4. Saute the vegetables for 4-5 minutes; add the garlic and tomatoes.
  5. Cook for 3-4 minutes, stirring often.
  6. Add the chicken broth and bring to a boil; reduce the heat to a simmer and cook for 1 hour and 15 minutes.
  7. Using a hand-held blender, puree half of the soup.
  8. Stir in the parsley; re-season with salt and pepper if needed.
  9. Stir in the heavy cream.
  10. For the dumplings: In a small mixing bowl, combine the goat cheese, extra-virgin olive oil and basil; mix until the mixture is fully incorporated.
  11. Season with salt and pepper.
  12. Spoon 1 tablespoon of the cheese mixture in the center of each wonton wrapper; brush the edges of the wrappers with a little water.
  13. Bring two corners of the wrappers together and seal, forming a triangle.
  14. Fry the wontons for 1-2 minutes or until the dumplings are golden and crispy; remove from the fryer and drain on a paper-lined plate.
  15. Season the dumplings with seasoning salt(s).
  16. Ladle the soup in a shallow bowl.
  17. Garnish with the dumplings and parsley.
