creole style tomato soup with goat's cheese dumplings

Looks like I have "adopted' this recipe! Sounds yummy, so it looks like I will be making it next week.....I will let everyone know how it turns out!

Ingredients

  • 2 tablespoons olive oil
  • 2 cups yellow onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 2 tablespoons garlic clove, minced
  • 8 cups tomatoes, fresh and chopped, peeled and seeded
  • 1/2 gallon chicken broth
  • 1/4 cup parsley, finely chopped sprigs
  • pinch salt
  • pinch pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup heavy cream
  • 1 cup goat cheese, room temperature
  • 2 tablespoons olive oil
  • 2 tablespoons basil, fresh chopped
  • 16 - wonton wrappers
  • 1/4 cup water
  • 2 tablespoons parsley, finely chopped sprigs

How To Make creole style tomato soup with goat's cheese dumplings

  • Step 1
    Preheat the fryer.
  • Step 2
    In a large sauce pan, heat the olive oil.
  • Step 3
    When the oil is hot, saute the onions, celery and carrots; season the vegetables with salt, pepper, and cayenne.
  • Step 4
    Saute the vegetables for 4-5 minutes; add the garlic and tomatoes.
  • Step 5
    Cook for 3-4 minutes, stirring often.
  • Step 6
    Add the chicken broth and bring to a boil; reduce the heat to a simmer and cook for 1 hour and 15 minutes.
  • Step 7
    Using a hand-held blender, puree half of the soup.
  • Step 8
    Stir in the parsley; re-season with salt and pepper if needed.
  • Step 9
    Stir in the heavy cream.
  • Step 10
    For the dumplings: In a small mixing bowl, combine the goat cheese, extra-virgin olive oil and basil; mix until the mixture is fully incorporated.
  • Step 11
    Season with salt and pepper.
  • Step 12
    Spoon 1 tablespoon of the cheese mixture in the center of each wonton wrapper; brush the edges of the wrappers with a little water.
  • Step 13
    Bring two corners of the wrappers together and seal, forming a triangle.
  • Step 14
    Fry the wontons for 1-2 minutes or until the dumplings are golden and crispy; remove from the fryer and drain on a paper-lined plate.
  • Step 15
    Season the dumplings with seasoning salt(s).
  • Step 16
    Ladle the soup in a shallow bowl.
  • Step 17
    Garnish with the dumplings and parsley.
