creole style tomato soup with goat's cheese dumplings
Looks like I have "adopted' this recipe! Sounds yummy, so it looks like I will be making it next week.....I will let everyone know how it turns out!

Ingredients
- 2 tablespoons olive oil
- 2 cups yellow onion, chopped
- 1 cup celery, chopped
- 1 cup carrots, chopped
- 2 tablespoons garlic clove, minced
- 8 cups tomatoes, fresh and chopped, peeled and seeded
- 1/2 gallon chicken broth
- 1/4 cup parsley, finely chopped sprigs
- pinch salt
- pinch pepper
- 1/4 teaspoon cayenne pepper
- 1/2 cup heavy cream
- 1 cup goat cheese, room temperature
- 2 tablespoons olive oil
- 2 tablespoons basil, fresh chopped
- 16 - wonton wrappers
- 1/4 cup water
- 2 tablespoons parsley, finely chopped sprigs
How To Make creole style tomato soup with goat's cheese dumplings

Step 1Preheat the fryer.

Step 2In a large sauce pan, heat the olive oil.

Step 3When the oil is hot, saute the onions, celery and carrots; season the vegetables with salt, pepper, and cayenne.

Step 4Saute the vegetables for 4-5 minutes; add the garlic and tomatoes.

Step 5Cook for 3-4 minutes, stirring often.

Step 6Add the chicken broth and bring to a boil; reduce the heat to a simmer and cook for 1 hour and 15 minutes.

Step 7Using a hand-held blender, puree half of the soup.

Step 8Stir in the parsley; re-season with salt and pepper if needed.

Step 9Stir in the heavy cream.

Step 10For the dumplings: In a small mixing bowl, combine the goat cheese, extra-virgin olive oil and basil; mix until the mixture is fully incorporated.

Step 11Season with salt and pepper.

Step 12Spoon 1 tablespoon of the cheese mixture in the center of each wonton wrapper; brush the edges of the wrappers with a little water.

Step 13Bring two corners of the wrappers together and seal, forming a triangle.

Step 14Fry the wontons for 1-2 minutes or until the dumplings are golden and crispy; remove from the fryer and drain on a paper-lined plate.

Step 15Season the dumplings with seasoning salt(s).

Step 16Ladle the soup in a shallow bowl.

Step 17Garnish with the dumplings and parsley.
