Ingredients
- 3 tablespoons butter
- 1 medium onion, diced
- 4 cloves garlic, minced
- 28 ounces crushed tomatoes
- 1 cup vegetable stock
- 1/2 cup fresh basil
- 1/2 cup heavy cream
- salt and pepper
How To Make creamy tomato soup

Step 1Add oil to a saucepan over medium heat. Add the onion and sauté for 10 minutes. Add the garlic and cook for 30 seconds.

Step 2Add the tomatoes and vegetable broth. Bring to a simmer and simmer for 10 minutes.

Step 3Remove from heat. Add the basil and let steep for 10 minutes. Place in a food processor or use an immersion blender and blend well.

Step 4Add back to the saucepan. Place over low heat and add the heavy cream. Taste and adjust for salt and pepper Serve.
