Ingredients

  • 4 cups chicken broth, defatted
  • 1 cup onion, chopped
  • 3 cups celery, chopped with tops
  • 2 small potatoes, peeled and cubed
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 cup milk

How To Make creamy tater soup

  • Step 1
    In large saucepan, combine all ingredients except milk.
  • Step 2
    Cook until vegetables are very tender, about 10 minutes; cool slightly.
  • Step 3
    Transfer to blender and blend until smooth; stir in milk.
  • Step 4
    At this point, may be stored in refrigerator up to 1-week.
  • Step 5
    Heat before serving.
