Ingredients

  • 1 large onion, coarsely chopped
  • 6 cups water
  • 3 - potatoes, peeled and chopped
  • 3 - zucchinis, sliced
  • 1 pound low sodium soy sauce
  • - tightly packed black pepper to taste
  • cup mushrooms, freshly sliced
  • 2 cups spinach, fresh

How To Make creamy spinach soup

  • Step 1
    Place onion in a large pot with 1/2 cup water.
  • Step 2
    Cook and stir until onion softens slightly, about 3 minutes.
  • Step 3
    Add remaining 5 cups of water, potatoes, zucchinis, and soy sauce.
  • Step 4
    Bring to a boil, reduce heat, cover and simmer for 35 minutes.
  • Step 5
    Add spinach and pepper.
  • Step 6
    Cook for another 2 minutes.
  • Step 7
    Remove from heat.
  • Step 8
    Puree soup in batches in blender.
  • Step 9
    Return to pan.
  • Step 10
    Add mushrooms if desired.
  • Step 11
    Heat gently for 5 minutes.
  • Step 12
    Serve hot.
