Ingredients
- 1 large onion, coarsely chopped
- 6 cups water
- 3 - potatoes, peeled and chopped
- 3 - zucchinis, sliced
- 1 pound low sodium soy sauce
- - tightly packed black pepper to taste
- cup mushrooms, freshly sliced
- 2 cups spinach, fresh
How To Make creamy spinach soup

Step 1Place onion in a large pot with 1/2 cup water.

Step 2Cook and stir until onion softens slightly, about 3 minutes.

Step 3Add remaining 5 cups of water, potatoes, zucchinis, and soy sauce.

Step 4Bring to a boil, reduce heat, cover and simmer for 35 minutes.

Step 5Add spinach and pepper.

Step 6Cook for another 2 minutes.

Step 7Remove from heat.

Step 8Puree soup in batches in blender.

Step 9Return to pan.

Step 10Add mushrooms if desired.

Step 11Heat gently for 5 minutes.

Step 12Serve hot.
