This is a great recipe for left-over ham. So good on a cold winter night!

Ingredients

  • 3-1/2 cups peeled, diced potatoes
  • 1/3 cup diced celery
  • 1/3 cup finely chopped onion
  • 1 cup cooked, diced ham
  • 3-1/4 cup chicken broth
  • 1/2 teaspoon each, salt and pepper
  • 5 tablespoons butter
  • 5 tablespoons all purpose flour
  • 2 cups milk
  • 2 tablespoons chopped fresh chives

How To Make creamy potato soup w/ ham

  • Step 1
    In a lg pot, combine potatoes, celery, onion, ham and chicken broth, over medium heat. Bring to a broil until potatoes are tender, about 15 mins.
  • Step 2
    Stir in salt and pepper. In a saucepan, melt butter over med-low heat. Whisk in flour until thickened. Slowly whisk in milk. Stir for 5 mins.
  • Step 3
    Stir milk mix into potato mix and heat through. Sprinkle w/ chives.
