Ingredients

6 - 8 mediumpotatoes, peeled and cubed

1 mediumonion, chopped

2ribs celery, chopped

1 tspchopped garlic
-
2 tspsalt (or to taste)

1 tspblack pepper
-
4 cchicken broth (enough to cover potatoes)

1 ptheavy cream
-
6 Tbspbutter or margerine
-
1 cdry, instant potato flakes (for thickening)

OPTIONAL GARNISHES:
-
·bacon bits
-
·sour cream
-
·shredded cheddar cheese
-
·chopped green onion
How to Make Creamy Potato Soup
- Place potatoes, onions, celery, garlic, salt and pepper in the 4 c of chicken broth in a large pot. Add a little water if necessary to cover potatoes.
- Cover and cook on medium heat for about 30-45 minutes, stiring occasionally, until vegetables are fork tender. Add milk, butter, and potato flakes.
- Lower heat and simmer a few more minutes or until thickened. Do NOT Boil.
