creamy potato soup
This is still one of my favorite soups when I'm not feeling well. As with a lot of other soups, it is even better the next day. I have cut up left-over chicken and put it in the soup also.....

Ingredients
- 6 - 8 medium potatoes, peeled and cubed
- 1 medium onion, chopped
- 2 - ribs celery, chopped
- 1 teaspoon chopped garlic
- 2 teaspoons salt (or to taste)
- 1 teaspoon black pepper
- 4 cups chicken broth (enough to cover potatoes)
- 1 pint heavy cream
- 6 tablespoons butter or margerine
- 1 cup dry, instant potato flakes (for thickening)
- OPTIONAL GARNISHES:
- - bacon bits
- - sour cream
- - shredded cheddar cheese
- - chopped green onion
How To Make creamy potato soup

Step 1Place potatoes, onions, celery, garlic, salt and pepper in the 4 c of chicken broth in a large pot. Add a little water if necessary to cover potatoes.

Step 2Cover and cook on medium heat for about 30-45 minutes, stiring occasionally, until vegetables are fork tender. Add milk, butter, and potato flakes.

Step 3Lower heat and simmer a few more minutes or until thickened. Do NOT Boil.
