creamy potato soup

This is still one of my favorite soups when I'm not feeling well. As with a lot of other soups, it is even better the next day. I have cut up left-over chicken and put it in the soup also.....

Ingredients

  • 6 - 8 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 - ribs celery, chopped
  • 1 teaspoon chopped garlic
  • 2 teaspoons salt (or to taste)
  • 1 teaspoon black pepper
  • 4 cups chicken broth (enough to cover potatoes)
  • 1 pint heavy cream
  • 6 tablespoons butter or margerine
  • 1 cup dry, instant potato flakes (for thickening)
  • OPTIONAL GARNISHES:
  • - bacon bits
  • - sour cream
  • - shredded cheddar cheese
  • - chopped green onion

How To Make creamy potato soup

  • Step 1
    Place potatoes, onions, celery, garlic, salt and pepper in the 4 c of chicken broth in a large pot. Add a little water if necessary to cover potatoes.
  • Step 2
    Cover and cook on medium heat for about 30-45 minutes, stiring occasionally, until vegetables are fork tender. Add milk, butter, and potato flakes.
  • Step 3
    Lower heat and simmer a few more minutes or until thickened. Do NOT Boil.
