I like this for a "lunch" soup for 2. You could also serve it as an appetizer soup.

    carrots, scraped and shredded
  • 2/3 c
    celery, thinly sliced
  • 1/4 c
    onion, finely chopped
  • 1/4 c
    butter, melted
  • 1/4 c
    all-purpose flour
  • 4 c
  • 1 tsp
  • 1 dash(es)
    black pepper
  • 2 c
    sharp cheddar cheese, shredded
  • 1 c
    ham, cooked and cubed

How to Make Creamy Cheddar Soup


  1. Saute carrot, celery, and onion in butter in a small Dutch oven until tender.
  2. Add the flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Add salt and pepper; stir well.
  3. Add the cheese and ham; stirring until the cheese melts. Serve immediately.
