I like this for a "lunch" soup for 2. You could also serve it as an appetizer soup.

Ingredients

  • 2/3 cup carrots, scraped and shredded
  • 2/3 cup celery, thinly sliced
  • 1/4 cup onion, finely chopped
  • 1/4 cup butter, melted
  • 1/4 cup all-purpose flour
  • 4 cups milk
  • 1 teaspoon salt
  • 1 dash black pepper
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup ham, cooked and cubed

How To Make creamy cheddar soup

  • Step 1
    Saute carrot, celery, and onion in butter in a small Dutch oven until tender.
  • Step 2
    Add the flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly. Add salt and pepper; stir well.
  • Step 3
    Add the cheese and ham; stirring until the cheese melts. Serve immediately.
