Ingredients
- 1 - small onion diced
- 2 - large pimientos diced
- 3 tablespoons butter
- 1 1/2 cups chicken broth
- 2 cups cream
- 2 cups grated cheddar cheese
- 1/2 cup green onions
- - salt and black pepper
- dash cayenne pepper (optional)
- FOR THE HOMEMADE CROUTONS
- 1 - loaf of french bread cubed
- - peanut oil for frying
- - parsley and parmesan (optional
How To Make creamy cheddar cheese soup with homemade croutons

Step 1In a saucepan, saute onion and pimientos in butter for 5-7 minutes

Step 2blend in flour and then add stock and cream--cook until thick--add cheese and stir until melted--add 1/2 cup green onions, salt and pepper to taste and cayenne pepper if desired

Step 3allow bread crumbs to sit overnight to become stale--heat oil to 350 degrees and add bread cubes and fry, stirring constantly until browned (takes no time at all) remove and drain on paper towels. season and serve--I personally just like these seasoned with salt--ladle soup into a bowl and serve with some croutons on top
