Ingredients
- 1 bunch broccoli florets
- 1 small white onion, finely chopped
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 1 1/2 cups chicken stock (sub veggie stock)
- 1 cup heavy whipping cream
- 3/4 cup shredded cheddar cheese or 1 10oz canned cheese
- 1 cup shredded white cheddar cheese
- 1 teaspoon cayenne pepper
- 1-2 pinch salt and pepper to taste
- 1/2 cup chopped green onion as garnish

Step 1Prep: Cut the head of broccoli into very small florets and discard the stems; finely chop the small white onion

Step 2Over medium-high heat in a dutch oven or pot, melt the butter and saute the onions about 3-5 minutes until softened. Add the flour and wisk until incorporated. Add stock and cook for 5 minutes. Add the cream, broccoli florets, cheese(s) and seasonings, salt and pepper to taste then simmer on low for 30 minutes.

Step 3Serve hot garnished with chopped green onions and additional shredded cheese if desired.
