Ingredients
- I medium sweet onion
- 1/2 stick butter
- 1/4 cup all purpose flour
- 3 cups chicken broth
- 1 1/2 cups heavy cream
- 1 cup white chedder cheese, grated
- 1 cup sharp chedder cheese, grated
- 1 cup med chedder cheese, grated
- - salt and pepper
- - dash of cayenne pepper ( optional)
- - dash of paprika
- 4 slices bacon

Step 1in a savcepan , cook bacon until done remove add onions saute until clear,add butter and flour cook for 5-7 min, blend in stock and cream,cook until thick, add cheese and stir until melted add salt and pepper, cayenne & paprika.top with bacon and green onion and more cheese,

Step 2my family like to put sour cream on top as well. sometimes i add some beer for tast. that would make it beer chedder soup, it a soup you can play with.
